While there is no denying the impeccable nature of marble, this stone requires some regular care with sealant to prevent staining and etching. In contrast to the more sturdy stone surfaces, if marble isn’t accurately cared for, it can rapidly become stained, carved, or scratched permanently. On the bright side, marble is know for its beauty, value, and cool surface which makes it an excellent choice for bakers and cooks. Marble Countertops in a Baker's Kitchen

Marble is readily available in North Texas.  These stones are imported from all over the world.  They are exceptionally heavy and can last a lifetime.  In other cultures a little staining or etching just shows that the countertop has been broken in .  Not so much in North Texas, the impetus is to keep the countertops pristine. Sealing the stone will help but not guarantee that it will not get damaged.  Etching can occur should wine spill directly on the countertop, for example.  Etching will look like the polish has been removed where it came in contact with the marble stone. 

Consider this, for an avid baker a marble countertop is preferred.  In this case, a compromise may be to  install the marble on the center island and another stone, like granite or quartz, on the countertops surrounding it.  This will provide the needed cool worksurface for baking while combining it with a more resilient stone in the rest of the kitchen.
